Production area
It's vinified in Chiusavecchia (Imperia) using the grapes
of one or more white-berry vines.
Vinification
Grapes are picked up by hand and stalks are removed. Grapes
are softly pressed and the must is decanted through the
temperature control and it's fermented at 18° C. At
the end of the fermentation, the wine is filtered, refrigerated,
and refined into inoxidizable steel tanks till the springtime.
Characteristics
Its colour is an intense straw-yellow with fine greenish
reflexes. It appears crystalline and of medium consistency.
The perfume expresses a good olfactory complexity, with
scents of golden apple and whitethorn flowers. On the
palate the wine is dry, with a moderate caloric sensation.
It has a quite evident tasty and fresh mark, and a final
good persistency.
It's a dry white wine of moderate alcoholic content with
evident fresh marks, suited to be served with fish hors
d'oeuvres; it's an ideal aperitif.
Serving temperature
The ideal serving temperature is 10° C, in medium
chalices.
Enclosed in a 75 cl white Bordeaux bottle (provided with
an innovative silicone cap), which highlights its wonderful
colour.
