Castellaro Selezioni is a line of wines and extra vergine olive oils coming from Liguria (Italy). The idea is born from Fabio Castellaro's passion in looking for selected raw materials in order to obtain genuine and high quality products, trough the best manufacturing methods.
To be sure of respecting strict quality standards, Fabio Castellaro, personally and carefully follows each phase of the production. Therefore he constantly controls the cultivation and verifies every phase of the grapes and olives selection, to be sure to have high quality raw materials. In wine production, deep attention is paid on the softness of the pressing and the fermentation, which is done using only exclusively selected yeasts (see the section from the vineyard to your table). Finally, at the right ripening level, the bottling comes. Our oil is made using exclusively local olives which are ground trough a millstone.
