Production area
It's produced using grapes of the pigato variety, purely
vinified and cultivated in a hilly area of the West of
the Liguria region, in Salea di Albenga (Savona).
Vinification
Grapes are picked up by hand in the second decade of September
and softly pressed (0.2 a.t.m.) to obtain the flower must
which is fermented at a controlled temperature. After
a refining period into inoxidizable steel tanks, it's
filtered and refrigerated and in the springtime it's ready
to give us its unique equilibrium and bouquet.
Characteristics
Its colour is an intense straw-yellow with evident golden-green
reflexes. It appears lipid and of rich consistency. Its
perfume is very intense and persistent with clear scents
of ripe yellow peach, sage and a light mineral mark. On
the palate the wine is dry, hot, with agreeable evident
which are yet balanced by light fresh and tasty marks.
It expresses a final good persistency which let foresee
a possible evolution over time.
It's a dry white wine of good olfactory content, suited
to be served with a large series of dishes such as mussels
and clams, "trofiette al pesto", baked fish
and, in general, for all fish dishes.
Serving temperature
The ideal serving temperature is 12° C, in medium
chalices with high stem.
Bottles has to be keeped in the lowest shelves of the
wine cellar at a constant temperature between 10 and 14°
C. Enclosed in a 75 cl white Bordeaux bottle grapes green
(provided with an innovative silicone cap).
