Production
area
It's vinified in Chiusavecchia (Imperia) using the grapes
of one or more black- and rosy-berry vines.
Vinification
Grapes are pressed, stalks are removed and colouring substances
are extracted through a soft maceration during the fermentation.
Then, fermentation continues at controlled temperature
without peels till the complete sugar consumption. The
wine is therefore refined into inoxidizable steel tanks
and it's bottled in springtime.
Characteristics
At sight the wine presents a medium intensity pink colour
with light coral shades. Its colour is very limpid and
with a delicate consistency. The perfume is enough intense
and persistent, with refined fruity scents which recall
the ribes, the raspberry and the sour black cherry. On
the palate an agreeable slightly acid mark and a tasty
vein shift the equilibrium on the freshness, which is
partially mitigated by a good presence of extractive substances
and a final good persistency.
It's a dry rosé wine of moderate alcoholic content
suited to be served with: delicatessen and fish hors d'oeuvres,
all kind of dishes presenting the tomato as an ingredient,
first courses and white meats.
Serving
temperature
The ideal serving temperature is 12° C, in lightly
flaring chalices with high stem.
Enclosed in a 75 cl white Bordeaux bottle (provided with
an innovative silicone cap), which highlights its wonderful
colour.
