Production
area
It's vinified in Chiusavecchia (Imperia), using the grapes
of one or more black-berry grapes.
Vinification
The vinification starts with the separation and pressing
of grapes, which arrive in the cellar ripe, with intact
peel, without colouring substances. The steeping holds
among 4 days at a maximum temperature of 25° C. The
fermentation end before the end of Winter. The wine, refined
for some months, is bottled in springtime.
Characteristics
Its colour is ruby red with light purple reflexes. The
perfume expresses evident fruity sensations (which recall
the sour black cherry and the ribes) and light floral
marks of elder and violet. On the palate it's characterised
by a moderate alcoholic content, with pleasant tasty and
freshness disposed upon already soft tannins.
It's a dry red wine with a strong core and an agreeable
freshness, suited to be served with mushrooms, stuffed
rabbit and flesh cooked following the traditional recipes
of Liguria.
Serving
temperature
The ideal serving temperature is 15° C, in medium
chalices with high stem.
It presents adequate evolutionary prerogatives after 1-2
years after the grape harvest.
