Production area
It's produced using grapes of the vermentino variety,
purely vinified and cultivated in a hilly area of the
West of the Liguria region, in Salea di Albenga (Savona).
Vinification
Grapes are picked up by hand in the first decade of September
and softly pressed (0.2 a.t.m.). The must, naturally decanted
through the temperature control, begins the fermentation.
After a refining period into inoxidizable steel tanks,
it's ready to give us its unique equilibrium and bouquet.
Characteristics
Its colour is an intense straw-yellow embellished by bright
green reflexes. It appears lipid and of good consistency.
Its perfume is very intense and persistent with clear
scents of fresh fruits in agreeable evidence, with a light
sage and elder flowers mark. The gustative formulation
identifies a good structure, supported by a pleasant caloric
structure. Tones are soft and balanced by fresh and tasty
marks. It expresses a long final with a good persistency.
It's a still dry white wine of good tasty content, suited
to be served with a large series of dishes such as fish
hors d'oeuvres, stuffed vegetables, pansotti with walnut
sauce, lasagne al pesto and all first courses of the Liguria
tradition.
It presents adequate evolutionary prerogatives after 1-2
years after the grape harvest.
Serving temperature
The ideal serving temperature is 12° C, in medium
chalices with high stem.
Bottles has to be kept in the lowest shelves of the wine
cellar at a constant temperature between 10 and 14°
C. Enclosed in a 75 cl white Bordeaux bottle grapes green
(provided with an innovative silicone cap).
